- * Pate Brisee
- 3 * 3 large eggs plus 1 large egg yolk
- 3/4 * 3/4 cup plus 1 tablespoon heavy cream
- 1/2 * 1/2 cup packed dark-brown sugar
- 1 1/2 * 1 1/2 tablespoons all-purpose flour, plus more for dusting
- 1 * 1 teaspoon coarse salt
- 1 * 1 teaspoon ground ginger
- 1 * 1 teaspoon ground cinnamon
- 1/2 * 1/2 teaspoon freshly grated nutmeg
- 1 * 1 can (15 ounces) pumpkin puree
- 1/2 * 1/2 cup pure maple syrup
- 1 * 1 teaspoon pure vanilla extract

Step 1
# Reduce oven to 350. Combine sugar, flour, salt, and spices. In a large bowl, whisk together pumpkin, maple syrup, vanilla, eggs, and remaining 3/4 cup cream. Whisk in flour mixture.
# Place partially baked piecrust on a rimmed baking sheet. Pour filling into crust. Bake until slightly puffed and almost set (it should jiggle slightly when shaken gently), 35 to 40 minutes.
