Fresh Spinach 2-3 cups
Endives 1-2 (tips and middle only)
Chives (handful) (or other favorite herb)
Garlic (2 cloves)
Sundried tomatoes ½ cup
(not in olive oil; if in olive oil no need for add’l oil below)
Goat cheese ¼ cup (or feta)
Olive oil 2-3 tbls.
Blend/Pulse into a paste. Spread over whole wheat crackers or celery sticks or carrots. Can even top over fish or chicken and bake.
