- Healthy Spread
- Fresh Spinach 2-3 cups
- Endives 1-2 (tips and middle only)
- Chives (handful) (or other favorite herb)
- Garlic (2 cloves)
- Sundried tomatoes 1/2 cup
- (not in olive oil; if in olive oil no need for add’l oil below)
- Goat cheese 1/4 cup (or feta)
- Olive oil 2-3 tbls.
- Blend/Pulse into a paste. Spread over whole wheat crackers or celery sticks or carrots. Can even top over fish or chicken and bake.
