Ingredients
- 1 (1 1/2- to 2-lb.) boneless beef chuck roast, trimmed
- 1/4 cup low sodium soy sauce
- 1 cup low sodium beef broth
- 1 bay leaf
- 2 whole black peppercorns
- 1/2 teaspoon dried rosemary, crushed
- 1/2 teaspoon thyme
- 1/2 teaspoon garlic powder
- 6 whole grain French sandwich rolls, split and slightly toasted

Preparation
Step 1
Place trimmed roast in a slow cooker. In a small bowl or cup, combine soy sauce and next 6 ingredients (broth through garlic powder); pour over roast then add enough water to almost cover roast. Cover and cook on LOW for 7 to 8 hours. Remove roast from slow cooker to a cutting board, reserving broth. Shred roast with a fork. Place shredded meat in sandwich rolls and serve with broth on the side for dipping.
SERVING SUGGESTION: Sweet Potato Fingers (scrub and dry sweet potatoes; slice into 1/2" thick rounds then cut rounds into 1/2" thick “fingers”. Place in a bowl and toss with olive oil, chili powder, garlic powder and salt. Spread in a single layer on a baking sheet and roast in a preheated 425-degree oven for 30 to 35 minutes or until brown and tender, stirring every 10 minutes). Add a big salad on the side.
VEGETARIAN: Use vegetarian steak strips such as Morningstar Meal Starters.
