Ingredients
- 4 (6-oz.) boneless skinless chicken breast halves
- 1/2 cup chopped onion
- 1/4 cup sun-dried tomatoes (not packed in oil), chopped
- 1/4 cup chopped pitted Kalamata olives
- 1 tablespoon lemon juice
- 1/2 tablespoon balsamic vinegar
- 2 cloves garlic, pressed
- 1/4 teaspoon salt

Preparation
Step 1
Place chicken in a slow cooker; add remaining ingredients. Cover and cook on LOW for 4 to 6 hours or until chicken is cooked through.
LC SERVING SUGGESTION: Stir-fried zucchini and yellow squash; add a big spinach salad.
SERVING SUGGESTION: Add steamed red skinned potatoes.
