Ingredients
- 4 (4-oz.) pound halibut fillets OR other firm white fish
- 1/2 tablespoon olive oil
- 1 large egg white
- 1/4 cup shredded low fat Cheddar cheese
- 1 tablespoon spicy brown mustard
- 1 tablespoon chopped green onions

Preparation
Step 1
Preheat oven broiler. Brush both sides of fish lightly with oil. Place fish on the rack of a broiler pan; broil 2 to 3 inches from heat source for 5 minutes; turn and continue to broil until fish is just opaque in the center, 6 to 8 minutes longer. Using an electric mixer, in a medium bowl, beat egg white until stiff; fold in cheese, mustard and green onions. Spread mixture over the top of the fish, then broil until topping is golden, about 1 1/2 minutes.
