Ingredients

  • Filling:
  • 6 medium potatoes, peeled and quartered
  • 1 quart (4 cups) water
  • 3/4 cup grated American cheese
  • 1/2 tsp. salt
  • Dough:
  • 2 cups all-purpose flour
  • 2 eggs
  • 1/2 tsp. salt
  • Lukewarm water
  • Sauce:
  • 1/4 cup (1/2 stick) butter
  • 2 medium onions, chopped

Step 1

For the filling, combine the potatoes and water in a medium saucepan and bring to a boil. Once the potatoes are tender, remove from the heat and drain. Mash the potatoes until smooth and add the cheese and salt.
In a mixing bowl combine the flour, eggs, salt and enough water to make workable dough. Flour your rolling surface and roll the dough out to 1/8-inch thickness. Cut into 2-inch squares. Place some of the filling in the center of each square. Fold the dough over and pinch the corners to seal the edges. Drop the pierogies into boiling water and cook them for 6 minutes or until they float.
For the sauce, melt the butter in a small saucepan and saute the onions until tender. Pour the sauce over the finished pierogies.
