Ingredients

  • 4 chicken thighs
  • 1 cup peanut butter
  • 1/4 cup brown sugar
  • 4 garlic cloves, minced
  • zest and juice of 1 lime
  • 1/2 teaspoon crushed red pepper flakes, or to taste
  • 1/4 teaspoon pepper
  • 1/4 cup soy sauce
  • 1/2 cup water

Preparation

Step 1

Pat thighs dry with a paper towel.
Score 3 times with a sharp knife (or) puncture 3 times with a fork.
This ensures that the flavor penetrates deeper into the meat.
Place thighs in a plastic bag and set aside.

In a bowl, whisk together the remaining ingredients until smooth.
Pour into the bag with the thighs and seal the bag.
Massage the marinade into the meat.
Refrigerate for a minimum of 30 minutes or up to 24 hours.

When ready to cook:

Preheat oven to 350 degrees.
Line a baking sheet with parchment paper.
Remove the thighs from the bag and place on the baking sheet.
Bake for 30 minutes for skinless (or) 40 minutes for bone in thigh (or) until meat thermometer reads 165 degrees.
