Ingredients

  • 1/4 c + 2 T butter, softened
  • 2/3 c + 3 T sugar, divided
  • 1/4 c molasses
  • 1 egg
  • 2 c flour
  • 2 t baking soda
  • 1 t ground ginger
  • 1 t cinnamon
  • 1/2 t ground mace
  • Cooking spray

Preparation

Step 1

Cream butter, gradually add 2/3 c of sugar, beating at medium speed until light and fluffy. Add molasses and egg, beat well.
Combine flour and next 4 ingredients. Gradually add to creamed mixture, stir well. Divide dough in half. Wrap,each portion in plastic wrap and freeze for 30 minutes.
Shape each portion into 26 balls. Roll in remaining 3 T sugar. Place 2" apart on cookie sheets coated with cooking spray. Bake at 350 for 12 mins. Remove and cool.
