Ingredients

  • 4 (6-oz.) boneless skinless chicken breast halves
  • Non-aerosol cooking spray
  • 1/4 cup low fat mayonnaise
  • 1/4 cup low fat plain yogurt
  • 2 teaspoons chives
  • 2 teaspoons dill
  • 1/4 teaspoon black pepper

Preparation

Step 1

Preheat oven to 375 degrees. Place chicken in a baking dish sprayed with cooking spray; bake until cooked through, about 25 to 30 minutes. Meanwhile, in a small bowl, combine mayonnaise, yogurt, chives, dill and pepper. Serve chicken topped with sauce.

LC SERVING SUGGESTION: Cauli-Rice (process cauliflower in a blender or food processor until it resembles grains of rice; steam “rice” till tender; drain; salt and pepper to taste and fluff with a fork) and garlic sauteed spinach.
SERVING SUGGESTION: Serve with brown rice instead of Cauli-Rice.
