Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1/4 cup Dijon mustard
- 1/4 cup coarse (whole-grain) mustard
- 3 tablespoons honey
- 2 tablespoons light brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon onion powder
- 1 cup chicken stock or broth

Preparation
Step 1
1) Place chicken at the bottom of cooker.
2) Whisk together Dijon mustard, coarse mustard, honey, brown sugar, salt, and onion powder to create a honey dijon glaze.
3) Spread half of the glaze over the chicken in the cooker. Reserve the remaining glaze.
4) Pour chicken broth into cooker, lock the lid, and cook at 15 psi for 8 minutes.
5) Let pressure release naturally for 10 minutes. Quick release any remaing pressure.
6) Use tongs to remove chicken from liquid in the cooker. Spread with remaining Dijon glaze before serving.
7) Place the reglazed chicken under a pre-heated broiler set to HIGH for 2-3 minutes to brown before serving.
