Taco Casserole

Ingredients
- 1-1/2 pounds ground beef
- 1 cup uncooked pasta (elbow macaroni or small egg noodles)
- 1/2 cup chopped onion
- 1 pint Stewed Tomatoes, Homemade
- 1 pint Salsa, Homemade
- 1 pkg. Taco seasoning mix
- 2-3 cups Mexican Blend Shredded Cheese
- 1-2 cups crushed Tortilla chips
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Red Pepper Flakes for spice, if desired

Preparation
Step 1
Preheat oven to 350 degrees.
Cook pasta in a large pot of boiling water until cooked, but firm (al dente). Do not overcook pasta! It will finish cooking during baking. Drain.
In a large skillet, cook and stir ground beef & chopped onion over medium heat until brown, drain grease. Mix in taco seasoning mix. Add stewed tomatoes & salsa. Stir in pasta. (Mix in 3/4 cup shredded Mexican Blend Cheese).
Spoon beef mixture into a 9x13 inch baking dish. Sprinkle shredded Mexican Blend Cheese on top, covering beef mixture.
Bake for 30 to 35 minutes, until the cheese is melted.
Tortilla chips (can be heated) added to individual servings.
Serve with chopped green onions and sour cream. Add a dash or two of Tabasco Sauce or some Crushed Red Pepper Flakes for more spice to your individual serving!
