Ingredients
- 1 1/4 pounds boneless skinless chicken thighs
- 1/3 teaspoon salt
- 1/4 teaspoon black pepper
- 1 apple, peeled, cored and cut into 1/2-inch slices
- 2 medium green bell peppers, seeded, deribbed and cut into chunks
- 7.25 ounces canned diced tomatoes, undrained
- 1/2 cup apple juice
- 1/2 tablespoon curry powder
- 1 clove garlic, pressed
- 1/4 cup raisins

Preparation
Step 1
Sprinkle chicken with salt and pepper; place in slow cooker and top with apples. In a large skillet, combine bell peppers, tomatoes with their juices, apple juice, curry powder and garlic; bring to a boil; stir in the raisins. Pour mixture over chicken and apples in slow cooker. Cover and cook on LOW for 4 to 6 hours or until chicken is cooked through.
SERVING SUGGESTION: Baked sweet potatoes and steamed broccoli.
GLUTEN FREE: Make sure tomatoes are gluten free.
