Ingredients
- 1 lb boneless skinless chicken breasts cut into 1/2 in strips
- 2 tsp salt-free garlic seaoning blend (or 1 tsp garlic powder)
- 1 small onion chopped
- 1 T olive oil
- 1 garlic clove, minced
- 1 can (14 1/2 oz) diced tomatoes w/ liquid
- 1/2 - 1 pkg (10 oz) frozen spinach thawed and squeezed dry
- 1 C lo sodium chicken broth
- 3/4 C uncooked orzo pasta
- 1 tsp Italian seasoning
- 1/8 tsp crushed red pepper flakes, opt.
- 1/4 C grated parmesian

Preparation
Step 1
- Sprinkle chicken with garlic seasoning; saute chicken and onion in oil for 5-6 min. until chicken is no longer pink; add garlic and cook 1 min. longer
- Stir in rest of ingredients except cheese; bring to a boil; reduce heat; cover and simmer 15 -20 min; until orzo is tender and liquid is absorbed - may add liquid if necessary
- Garnish with cheese
