I have had this recipe for so long I can't even remember where I got it from. Never-the-less it's still an excellent recipe and delicious every time.

Ingredients

  • 2 pounds ground beef
  • salt and pepper to taste
  • parsley
  • celery
  • oregano
  • 2 eggs
  • 1 small can V-8 juice
  • saltine crackers, crushed
  • milk
  • green pepper, chopped
  • onion, chopped
  • ketchup or tomato sauce

Preparation

Step 1

Mix ground beef with spices in a medium sized bowl.

Add the eggs and V-8 juice.

Roll over crackers with a rolling pin to crush and place in a small bowl. Add enough milk to crackers to soften very moist.

Mix crackers with meat mixture.

Add green pepper, onion and celery.

Form into a loaf and place in a loaf pan.

Pour ketchup or tomato sauce over the top of the meat.

Bake at 350 degrees for 1 1/2 hours.
