Ingredients
- 4 Chicken cutlets
- S & p
- 1 clove garlic
- I pkg sliced mushrooms
- ½ c marsala wine
- 2 tablespoons capers

Step 1
1. Salt and pepper both sides of the chicken – add the chicken to a hot pan and brown both sides.
2. After the chicken is cooked take it out of the pan and add a bit more olive oil – put in the garlic clove whole into the hot oil. Le the garlic infuse it’s flavour into the oil but don’t let it burn or the oil will become bitter – once the garlic has lightly browned take it out and add your mushrooms.
3. Once the mushrooms are half way cooked then salt and pepper them. To this add the marsala wine and the capers.
4. Let this cook through for a few minutes – then add back the chicken and let the sauce infuse the chicken with flavour.
