Ingredients
- 1 tablespoon sesame seeds
- 1 teaspoon black peppercorns
- 1 teaspoon coriander seed
- 1/4 teaspoon salt
- 4 salmon fillets, skinned
- 1 teaspoon olive oil
- 1 cup apricot nectar
- 1/2 cup red pepper, diced
- 1/8 cup cider vinegar
- 1 teaspoon ginger root, minced

Step 1
1. Place sesame, pepper, coriander and salt in ziploc bag. Crush seeds. Place in shallow bowl. Coat 1 side of each fillet with seeds.
2. Heat oil in skillet. Add fillets, seed side down. Saute 4 minutes per side. Remove and keep warm.
3. Add apricot nectar, pepper, vinegar and ginger to pan. Boil, scraping up browned bits. Cook 1 minute. Reduce heat, return fish to pan, baste with sauce. Cover and simmer 1 minute.
