Everyone has a favorite cupcake recipe. Everyone thinks theirs i the best. But we'll put this one from Susan's personal cookbook up against all challengers. These cupcakes can be dipped in coconut, chocolate chips, sprinkles, M&M's, peanut butter chips, cookie crumbs, or just about anything else.

Ingredients

  • Cupcakes:
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup (1 stick) plus 1 tablespoon unsalted butter, at room temperature
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 1 cup whole milk
  • Frosting:
  • 2 1/2 cups confectioners' sugar
  • 1/2 cup (1 stick) salted butter, at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 2 tablespoons milk

Preparation

Step 1

1. Preheat the oven to 350 degrees
2. Butter two muffin pans or line the cups with paper cupcake liners.
3. Sift together the flour, salt, and baking soda and set aside.
4. With an electric mixer, cream the butter, sugar, and vanilla.
5. Add the eggs one at a time, beating well after each addition.
6. Gradually add the dry ingredients and then the milk. Beat until smooth.
7. Fill the cupcake cups with batter three quarters full.
8. Bake for 30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.

Frosting:
1. Combine the confectioners' sugar and butter in the bowl of an electric mixer and beat until fluffy.
2. Add the vanilla and milk and beat again until combined; do not overbeat.
3. Spread on top of the cooled cupcakes.
