  • 1 onion, diced
  • 2 T. butter
  • 1/2 C. white wine
  • 1 1/4 C. milk
  • 1 2/3 C. heavy cream
  • 1 tsp. garlic powder
  • 2 tsp. oregano
  • Salt and pepper to taste
  • 2 C. mozzarella cheese, divided

Preheat oven to 375 degrees. In a saucepan, cover potatoes with water and bring to a boil. Boil for 5 to 10 minutes to soften slightly, drain, and slice; set aside. In a skillet, melt butter and sauté onion until translucent. Pour in milk, cream, and wine; stir and heat briefly. In a bowl, add sliced potatoes and pour in hot cream mixture. Stir in 1 cup of mozzarella cheese, garlic powder, oregano, salt, and pepper, and then transfer contents into a greased baking dish. Top with remaining cheese, cover with foil, and bake for 30 minutes. Uncover and continue baking for an additional 30 to 45 minutes until tender and golden brown.
