Ingredients
- 1 1/2 cups quinoa
- 3 1/2 cups simmer water
- 1/4 cup chopped green onions
- 1 sliced fennel bulb
- Segments from 1 orange
- 1/4 cup olive oil
- 1/4 cup orange juice
- Salt and pepper, to taste
- 1/4 cup toasted pine nuts

Step 1
Cook quinoa in simmering water covered, for about 15 minutes; let cool. Toss with green onions, fennel, orange, olive oil, orange juice and salt and pepper. Top with fennel fronds and toasted pine nuts.
