Baked Tofu

I use this tofu for adding to stir-fries, and in a "tuna" noodle casserole or mix it with mayo and other fixings to make a sandwich spread. I even like to eat it cold from the fridge. The longer you soak the tofu the better it tastes.

Ingredients
- 1 lb extra-firm regular tofu (NOT silken)
- 1/8 about 1/8 cup vegan soy sauce
- VARIATIONS
- 1 tsp sesame oil added to the soy sauce for use in stir fries
- 1/4 tsp poultry seasoning or rosemary for a vegan turkey substitute.
- Kelp powder (optional)

Step 1
Preheat oven to 375 F
Slice tofu into 1/4 inch thick. Brush each slice (back and front) with soy sauce, sprinkle with kelp powder if using it, and allow it to marinate for 10 minutes. For a stronger flavour allow to marinate up to an hour.
Place on a lightly oiled baking sheet and bake for 10 to 15 minutes, turning once halfway through, until a deep golden brown and crispy on the outside but still tender on the inside. Remove from the oven.
