Ingredients

  • 2 cups unsweetened coconut
  • 1/2 cup sliced almonds
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 2 1/2 cups Rice Krispies
  • 4 cups strawberry ice cream, softened

Preparation

Step 1

Preheat oven to 350F. Spread coconut and almonds on baking sheets. Bake for 5-7 minutes, until golden. Watch carefully - burns easily.

In a medium saucepan, melt butter and sugar oven medium heat, stirring until sugar dissolves. Remove from heat.

With your hands, crush Rice Krispies slightly and stir into butter mixture, along with coconuts and almonds. Spread 1/2 of mixture over bottom of 9 x 13" baking pan. Spread ice cream over, top with rest of Rice Krispie mixture and pack down with the back of a spoon. Cover with plastic wrap. Freeze for 24 hours.
