Ingredients
- 3 egg yolks
- Dash of salt
- 1/2 cup plus 2 tbsp sugar
- 1 , 14 oz can crushed pineapple (drained, save juice)
- 2 tbsp lemon juice
- 3 stiffly beaten egg whites
- 1 cup whipping cream, whipped
- 1 1/2 to 2 cups vanilla wafer crumbs

Preparation
Step 1
Beat egg yolks, salt and 1/2 cup sugar. Add juice from pineapple and lemon juice. Cook over hot but not boiling water, until mixture coats a spoon, stirring constantly. Add pineapple and cool. Beat egg whites with 2 tbsp sugar, fold in whipped cream and cooled custard. Spray 10 x 6 x 2" pan. Spread 1/2 of the crumbs in pan. Pour in mixture. Cover with remaining crumbs. Freeze.
