Ingredients

  • 1 pound ground beef
  • 1 container (16 ounce) re-fried beans
  • 1 container (16 ounces) salsa
  • 1 package (1 ounce) taco seasoning
  • 2 1/2 cups broken tortilla chips
  • 3/4 cup green peppers, chopped
  • 1/4 cup green onions, sliced
  • 1 1/2 medium tomatoes
  • 4 ounces cheddar or Monterrey Jack cheese
  • 1/4 cup black olives
  • 1 cup shredded lettuce

Preparation

Step 1

Preheat oven to 375 degrees.
Cook ground beef.
Stir in beans, salsa and taco seasoning.
Heat to a boil.
In ungreased casserole; place 2 cups broken tortilla chips.
Top evenly with beef mixture.
Sprinkle with peppers, onion, cup of tomato, cheese and olives.
Bake uncovered 20 to 30 minutes.
Top casserole with lettuce, 1/2 cup tomato and remaining 1/2 cup tortilla chips.
