- 1 lb. orecchiette
- 1/4 C olive oil
- 3/4 Sweet Italian sausage (hot if you like spicy), casings removed
- 1 pint cheery tomatoes, halved
- 1/2 t crushed pepper
- Salt
- 2 oz. shredded aged provolone

Step 1
In large pot of boiling water cook pasta until al dente. Drain, reserving 1/4 C cooking water
Meanwhile in large deep skillet, heat 1 T olive oil until shimmering. Add the sausage cut in 1" clumps. Cook over moderately hi heat, turning once until browned & cooked thru, @ 8 min. Using slotted spoon transfer sausage to a plate.
Add 2 T olive oil to skillet along with tomatoes & crushed red pepper; cook over moderately hi heat, pressing the tomatoes until slightly softened, @ 4 min. Add reserved pasta cooking water, season with salt & cook over moderate heat, scraping up any browned bits. & crushing the tomatoes, until the liquid is reduced by half & the tomatoes are nearly broken down, @ 5 min.
Add pasta to skillet along with the sausage *& remaining 1 T of olive oil & cook , stirring until pasta is evenly coated @ 3 min. Remove from heat & stir in provolone. Serve right away.
