Chicken with Goat Cheese & Tomatoes 0 Picture

Ingredients

  • Four 4-oz trimmed boneless skinless chicken breasts
  • 1/2 C Canned, drained diced fire-roasted tomatoes or fire-roasted tomatoes with garlic
  • 2 oz (1/2 c) goat cheese crumbles
  • 2 Tbs. Finely chopped basil leaves

Preparation

Step 1

Preheat overn to 350 degrees. Season chicken with salt and pepper.

Place ovenproof skillet over high heat. When it's hot, lightly mist with a bit of nonstick spray and immediately add the chicken. Cook 1 to 2 minutes per side, until golden brown.

Remove pan from heat and top each piece of chicken with about 2 tablespoons of tomatoes and 1/2 ounce of the cheese.

Transfer skillet to oven and bake 5 to 9 minutes, until chicken is no longer pink in middle and cheese is melted. Top with basil then serve.
