Ingredients

  • 12 oz. fresh (quick-cook) linguine
  • 4 cloves garlic - minced
  • 1 lb. jumbo shrimp - peeled & deveined, tails removed
  • 2 lemons - halved
  • Minced fresh parsley to taste
  • Sale & Pepper to taste
  • 3 Tbsp. olive oil
  • 4 Tbsp. butter

Preparation

Step 1

Boil water for pasta & have it ready.

Heat olive oil and melt 3 Tbsp. butter in large skillet over medium heat. Add garlic and cook, stirring in the pan for 1 minute. Add the shrimp, then stir and cook for 2 1/2 - 3 mins, until shrimp are no longer translucent.

Squeeze in juice of the lemons, using your hands to catch the seeds. Add salt & pepper, an additional tablespoon of butter, then stir and reduce heat to low.

Throw linguine into boiling water. Cook until just done. Drain.

Remove skillet from heat. Add pasta and parsley and toss. Taste and adjust seasonings.
