Queen's Park Swizzle

Ingredients
- 2 oz dark rum (Lemon Hart 80)
- 1/2 oz strong simple syrup preferably Demerara
- 4-5 mint leaves, plus sprig to garnish
- 2-3 dashes of Angostura bitters
- lots of crushed ice

Preparation
Step 1
In a tall chimney glass, add mint leaves and simple syrup. Bruise gently with a muddler, trying to get the oils on to the sides of the glass.
Add rum and top with crushed ice.
If possible get a real swizzle stick (the natural branch), or use a bar spoon. Spin it between the palms of your hands, as to not spread the mint throughout the glass, but to keep it settled on the bottom.
Swizzle it until the sides of the glass get frosted. Add bitters and top with more ice.
If you can get it right, it should have a layered look of green, then caramel, then red on top. Add straw and garnish with mint.
