Sausage, Spinach, Tomato & Tortellini Soup

Ingredients
- 2 T olive oil
- 8 oz. sweet Italian sausage, casings removed
- 1/2 medium diced yellow onion
- 2 cloves chopped garlic
- 1/4 t dried oregano
- 6 C chicken broth
- 1 14.5 oz can crushed tomatoes
- 1 10-12 oz pkg. fresh or frozen tortellini
- 5-6 oz baby spinach
- Kosher salt & ground pepper
- Grated Parmesan cheese
- Crusty bread

Preparation
Step 1
Heat oil in large pot over med-hi heat. Add sausage & onion. Cook, stirring occasionally & breaking the sausage into small pieces until sausages are cooked thru & starting to brown, 8-10 min. Add garlic & oregano; cook until fragrant, @ 30 seconds.
Add broth & tomatoes; raise heat to high, & bring to a boil Add tortellini, lower heat to simmer, & cook according to pkg directions until pasta is tender, 3-5 min Stir in spinach, & cook just until wilted Season to taste with salt & pepper. Serve with cheese & crusty bread
