Ingredients

  • 1 (2 1/2 c) small head of cauliflower
  • 2 tbsp sesame oil
  • 1 small chopped onion
  • 1 cup of peas & carrots
  • 2 lightly beaten eggs
  • 2-3 tbsp soya sauce
  • green onions, optional

Preparation

Step 1

Clean and prepare cauliflower, then pass it through food processor to make cauliflower rice. Set aside.

Heat sesame oil in frying pan. Add onion, sautee till tender, then add peas & carrots. Cook till slightly tender. Push to the side of the frying pan and add eggs. Continue cooking until egg is scrambled and cook.

Add 2 1/2 c cauliflower rice. Then add soya sauce. Stir till well combined. Garnish with chopped green onions.
