Ingredients

  • Dry Ingredients:
  • 1 cup yellow, whole grain cornmeal
  • 1 cup flour (you can usw whole-wheat pastry flour if you like)
  • 1/4 cup sugar
  • 1 TBSP baking powder
  • Wet Ingredients:
  • 1 cup + 2 TBSP skim milk
  • 1 TBSP canola oil
  • 1 egg or 2 egg whites
  • salt

Preparation

Step 1

Preheat oven to 425.

Coat a 9" pie plate, 8x8 pan or 10 cup muffin tin with cooking spray.

Mix dry ingredients together in a bowl. Be sure baking powder is well distributed

Add wet ingredients to dry ingredients and mix until blended.

Pour into sprayed baking pan or muffin tins

Bake 20 minutes (15-17 minutes for muffins) or until a toothpick comes out clean.
