Ingredients
- 2 C all-purpose flour
- 2 t baking powder
- 2 t ground cinnamon
- 1 t salt (optional)
- 4 eggs
- 1 1/4 c vegetable oil
- 2 C sugar
- 3 C grated carrots
- Cream Cheese Frosting
- 6 oz cream cheese, softened
- 2 T evaporated milk
- 1 t vanilla extract
- 16 oz powdered sugar

Step 1
Preheat oven to 350 degrees. Combine flour, baking powder, cinnamon & (salt). Set mixture aside. Combine eggs, oil, & sugar. Beat till smooth. Stir in flour mixture & carrots. Grease & flour two 9" round cake pans or one 9X13 sheet pan. Pour in batter. Bake at 350 for 40-45 minutes (till toothpick comes out clean). Top w/ Cream Cheese Frosting when cool.
Cream Cheese Frosting:
In small bowl w/ mixer at medium speed, beat together the softened cream cheese & evaporated milk just till smooth. Beat in vanilla & sugar till blended. Let cake cook completely before frosting.
