Ingredients

  • Cakes:
  • 20 ounces cod, coarsely chopped
  • 1/2 cup fresh lemon juice
  • 6 tablespoons unsalted butter, divided
  • 1 1/2 cups finely chopped Spanish onion
  • Kosher salt and freshly ground black pepper
  • 1 1/2 cups panko breadcrumbs
  • 1 cup all-purpose flour
  • 1 cup sour cream
  • 3 tablespoons chopped chives
  • Homemade Tartar Sauce:
  • 1/2 cup finely chopped red onion
  • 1/2 cup chopped gherkins
  • 2 cups mayonnaise
  • Juice of 1 lemon (about 2 tablespoons)
  • 1 teaspoon freshly ground black pepper

Preparation

Step 1

1. Toss the fish in the lemon juice in a bowl. Melt 1 tablespoon of the butter in a sauté pan over medium heat. Sauté the onion in the butter until soft and translucent. Season with salt and pepper to taste. Stir in the breadcrumbs and the set the mixture aside to cool.
2. Combine the breadcrumb mixture and the fish. Add the sour cream and the chopped chives. Stir in the flour, ¼ cup at a time, to bind, but be careful to use just as much as you need to hold the cakes together. Form into six "cakes."
3. Meanwhile, make the tartar sauce by combining all ingredients in a bowl. Set aside.
4. Heat the remaining butter in large nonstick sauté pan on medium heat. Sauté the cakes on each side until golden brown, about 3-4 minutes on each side.
5. Serve with tartar sauce.
