  • 1 part pineapple juice (Be sure to get the bottled kind, not the canned)
  • 1 1/2 parts ginger ale

Preparation

Step 1

snowy Denver to help with the last minute preparations.  There are always so many last minute things to do right before a wedding, and one of the things that was put on my list was making the punch.  Originally I wanted to make a punch with orange juice, ginger ale, and guava juice, but I wasn’t able to find guava anywhere in Denver.  At that point it was the day before the wedding (I still had a long list of things to do) and I had no idea what I was going to do. I always make punch with guava juice…its just the perfect sweetness and makes the drink feel tropical and fancy.  I

STEP ONE: MAKE THE RASPBERRY-MINT ICE

Then add your raspberries.  This combination of mint and raspberries not only tastes and looks amazing, it also requires very little prep.  There’s no chopping or slicing which can be very time consuming when you are in the middle of the last-minute-wedding-rush details.

Next add orange juice.  By adding orange juice, instead of water, the punch won’t get watered down as the ice melts.

STEP TWO: MIX PUNCH INGREDIENTS

Simply mix one part orange juice, one part pineapple juice and one and a half parts ginger ale.  So if you were making 7 cups of  punch, you would mix 2 cups of orange juice, 2 cups of pineapple juice, and 3 cups of ginger ale.  I tried making this with one part ginger ale to make measuring easier, but it made the punch a little too sweet and it didn’t have enough fizz.  I also tried it with 2 parts, and it watered down the punch a little too much. To make it easy, I usually start with equal parts orange juice, pineapple juice, and ginger ale, and then add more ginger ale, little by little, until the juice is the desired sweetness and “fizziness”.

Make sure you are using the bottled pineapple juice and not the large cans.  The canned pineapple juice is much too watery and will water down your punch instead of adding flavor.

Add raspberry-mint ice cubes and enjoy!

For the raspberry-mint ice cubes (this will make enough for two ice cube trays)

Place 1-2 mint leaves in each well in the ice cube trays (allow the leaves to stick out of the tray a little bit). Follow with 2 raspberries per well, and fill trays with orange juice. Place in freezer overnight or until firm.

Mix orange juice,pineapple juice, and ginger ale in desired punch bowl or pitcher. Add ice cubes and serve.
