Ingredients
- 1 cup sweetened flaked coconut
- 3 cups half and half
- 2 eggs
- 3/4 cup white sugar
- 1/2 cup all purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup frozen whipped topping, thawed

Preparation
Step 1
Preheat oven to 350 degrees.
Coconut:
Spread coconut on baking sheet and bake.
Stir occasionally.
Bake until golden brown (about 5 minutes).
Pie Filling:
In medium saucepan, combine half and half, eggs, sugar, flour and salt.
Mix well.
Bring to boil over medium heat.
stir constantly.
Remove from heat.
Stir in 3/4 cup of toasted coconut and vanilla extract.
Reserve remaining coconut for the top of the pie.
Pour filling into pie shell.
Let stand in refrigerator until firm (about 4 hours).
Top with whipped cream and reserved coconut.
