Ingredients

  • 1 c long grain rice
  • 40 g unsalted butter
  • 4 garlic cloves, roughly chopped
  • 500 g mushrooms
  • 1/2 c dry white wine
  • 4 T soft cream cheese or soft goat's cheese
  • 1/2 c finely chopped chives
  • 1 c chopped Italian parsley

Preparation

Step 1

Cook rice in boiling water, Drain well, then set aside to dry out and cool slightly.
Melt butter in alarge pan over medium high heat. Add the garlic and mushrooms, season with salt and pepper, then cook, stirring, for 3-4 minutes until the mushrooms begin to soften. Add wine and simmer for 1-2 minutes until evaporated.
Reduce heat to low, then stir the cooked rice into the pan and cook for 3-5 minutes until the rice is heated through. Leave the pan undisturbed on the heat for 8-10 minutes so that it forms a golden crust on the botton.
Remove the pan from heat, then break up mixture with wooden spoon. Stir through the cheese, chives and parsley and divide among bowls and serve.
