Preparation

Step 1

Using a fork, spread refried beans on the bottom of a 9 x 9" pan. Stir 1/2 pint of sour cream until pourable , spread over beans. Cut green pepper into thin slivers, and place half of them over sour cream. Put salsa in a strainer for a few minutes to drain a bit. When drained, pour over pepper slices. Spread cheddar cheese evenly over salsa. Stir the other 1/2 pint of sour cream and pour over the cheese. Add diced tomato (if it is really juicy, put in a strainer for a few minutes). Next add the rest of the green pepper slivers. Place the diced onions on top of the pepper slices. Top with mozzarella cheese (or a pre-packaged taco cheese). Serve with tortilla chips.
