Wilted Spinach Salad

Ingredients

  • 8 cups torn spinach
  • 1/4 cup sliced green onions, or red onion
  • pepper
  • 3 slices bacon
  • 1 tablespoon white wine vinegar
  • 2 teaspoons lemon juice
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 hard-cooked egg, chopped
  • sliced fresh mushrooms

Preparation

Step 1

Put spinach and onion in a large bowl. Sprinkle with pepper. Cut uncooked bacon into tiny pieces and cook until crisp in a 12" skillet. DO NOT DRAIN!!
Stir in vinegar, lemon juice, sugar and salt. Remove skillet in heat; add spinach, mushrooms and onions. Toss gently til coated. Turn into serving dish. Top with chopped egg.
Serve immediately.
