Ingredients

  • 1/2 cup fresh mushrooms chopped fine OR
  • 1/4 cup canned mushrooms, chopped fine
  • 1/4 cup drippings from roasted chicken OR
  • 1/4 cup butter or margarine
  • 1/4 cup sifted flour
  • 2 cups chicken stock OR
  • 2 teaspoons instant chicken bouillon dissolved in.... 2 cups water
  • 1/2 teaspoon salt
  • bit of pepper
  • 2 tablespoons light dry wine Optional

Preparation

Step 1

Saute the chopped mushrooms and onion in the drippings or 1/4 cup of hot butter or margarine for about 5 minutes. Add flour and continue to cook and stir for another 3 minutes. Now bring the 2 cups of stock to a boiling point and add it immediately all at one time to the flour preparation. At once stir continuously over medium heat until smooth and thick, then simmer for about 5 minutes. Taste and season further if necessary. Add wine (optional) and cook for 2 more minutes
