Ingredients

    C flour

  • ¾

    C mashed potato flakes

  • C sugar

  • 1

    tsp. salt

  • ½

    tsp.ginger

  • 2

    tsp. vanilla

  • 2

    pkgs. active dry yeast

  • 1

    C milk

  • ½

    C water

  • ½

    C margarine or butter

  • 1

    C pineapple juice, room temp.

  • 3

    eggs

Directions

1. Combine 3 C flour, mashed potatoes, sugar salt, ginger, vanilla and yeast. 2. In med. saucepan, heat milk, water, margarine until warm. 3. Add warm liquid, pineapple juice, eggs to flour mixture. Blend slowly until moisted. 4. By hand, stir in 3 C flour to form stiff dough. Knead in 1/2-1 C flour until smooth and elastic about 5-8 min. Place in greasaed bowl, raise till double, 1-1 1/2 hours. 5. Punch down; divide into 3 parts. Put into 3, 8" or 9" cake pans. 6. Bake in 375 oven for 25-35 min.
