Ingredients
- Crust: 1 1/2 C. graham cracker crumbs
- 1/2 C. finely chopped pecans
- 5 Tbs. brown sugar
- 1 stick butter, melted
- Filling: 32 oz. cream cheese
- 1 C. brown sugar
- 1/4 C. cornstarch
- 1 C. sour cream
- 6 eggs, 1 egg yolk
- 2 tsp. vanilla
- Topping: 1 1/2 C. chopped pecans
- 3 eggs
- I jar caramel sauce

Preparation
Step 1
Press crust into springform pan, bake 10 minutes
Mix cream cheese, brown sugar and cornstarch until smooth, scraping bowl. Add sour cream mix on low, add eggs one at a time, scraping bowl often. Mix in vanilla.
Topping:
Sprinkle chopped pecans over the top of the cheesecake in an even layer. In a large bowl whisk the 3 eggs and then whisk in caramel. Pour over pecans on top of cake batter.
Bake *350 for 15 minutes, lower temp to *200 and continue baking for 1 hour and 10 minutes.
