Ingredients

  • 8 cups chopped tomatoes
  • 6 cups chopped apples (Cortland)
  • 1 cup chopped onion
  • 1 cup red pepper
  • 2 whole cloves, finely chopped
  • 1 cup red wine vinegar
  • 2 cups brown sugar
  • 1 tbsp mustard seed
  • 1/2 tsp. salt
  • 1 tbsp. cumin
  • 1 tbsp. coriander
  • 1 tbsp cinnamon
  • 1 tbsp chilli powder

Step 1

Chop tomatoes, apples, onions and peppers;set aside. In a large saucepan bring vinegar, sugar, mustard seed, salt and spices to a boil. Add finely chopped garlic. Reduce heat and add chopped goods. Simmer mixture, uncovered, stirring occasionally (stir more frequently toward end of cooking), about 1 1/4 hours, or until thickened. Cool chutney completely. Chutney keeps, covered and chilled, 2 weeks.
