Ingredients
- 2 tubes (8 oz. each) refrigerated garlic breadsticks
- 3 plum Tomatoes, seeded & finely chopped
- 1 small Zucchini, finely chopped
- 4 T. Italian Salad Dressing, divided
- 1 T. minced Fresh Parsley
- 2 t. Garlic Powder, divided
- 1 t. Dried Basil
- 1/2 t. Italian Seasoning
- 1/2 C. grated Parmesan Cheese
- 2 C. (8 oz.) shredded Monterey Jack Cheese, divided
- 2/3 C. Ricotta Cheese

Step 1
Unroll breadsticks; place in a greased cookie sheet. Press onto the bottom&up the sides of the pan to form the crust; pinch seams to seal. Bake at 350 for 6-8 minutes or until lightly browned.
Meanwhile, in a small bowl, combine the tomatoes, yellow squash, zucchini, 2 T. dressing, parsley, 1 t. garlic powder, basil&italian seasoning; set aside.
Spread remaining dressing over crust; sprinkle with Parmesan cheese&1 C. Monterey jack cheese. Top with vegetable mixture; dot ricotta over veggies. Sprinkle with remaining monterey jack and garlic powder.
BAKE350 for 20-25 minutes. or until cheese is melted&crust is golden brown.
