Roasted Macadamia Nut Tart

- 1 unbaked sweet tart crust, 8-10 inches
- 1 pound Macadamia nuts, chopped small
- 1 recipe of Fig Curd
- 1 cup brown sugar
- 3/4 cup light corn syrup
- 1 teaspoon vanilla extract
- 6 ounces unsalted butter
- 3 eggs

Step 1
Prepare a sweet 8-10 inch tart crust. Do not bake.
Place chopped nuts on sheetpan. Salt lightly, if necessary, and roast for about 6-10 minutes at 325 degrees.
Place brown sugar, corn syrup, vanilla, and butter in pan and bring to a boil, stirring often. Cool and add eggs. Return to low heat briefly, stirring constantly til it thickens very slightly, about 3 minutes.
Spread fig curd onto tart shell. Spread nuts evenly over the curd. Stirl the filling well and pour on the filling almost to the rim of the shell.
Bake until set at 350 degrees, about 25 minutes. Chill for clean slicing.
Delicious served with ice cream.
