Ingredients

  • 1/2 cup plus 1 tablespoon masa harina (corn flour, not corn starch)
  • 1 1/2 cups apple juice
  • 1 1/2 cups milk
  • 4 1/2 cups water
  • 1 teaspoon cinnamon or 1 (4-inch) cinnamon stick, broken
  • 4 1/2 ounces piloncillo or 1/4 cup brown sugar

Step 1

Instructions
Whisk together all of the ingredients in a large saucepan over medium heat. Bring to a boil, whisking constantly. Reduce to a simmer and cook for 15 minutes, stirring occasionally.
Strain the atole with a medium strainer. If the atole is too thick for your liking, feel free to add a bit of water and more piloncillo, if desired. Allow to cool slightly, then serve.
