Ingredients
- 1 lb fettuccine
- 1 cup reserved pasta water
- 4 TBSP olive oil
- 5 cloves garlic
- 13/4 cup sundried tomatoes
- 1 (14 oz) can of petite diced tomatoes, drained
- 3 TBSP tomato paste
- 1/2 TBSP sugar
- 1/2 cup plain greek yogurt
- 1/4 cup sour cream
- 1 1/2 cups baby spinach
- Crushed red pepper flakes, salt and pepper

Preparation
Step 1
1. Bring water to boil and add 1 tbsp of olive oil to water. Cook fettuccine.
2. In a small bowl combine the yogurt and sour cream (mix and set aside)
3. In a skillet add 3TBSP olive oil. Once oil is heated add garlic and sundried tomatoes. Saute about 2 minutes
4. Turn heat down to medium ow and add diced tomatoes, tomatoe paste and sugar. Stir.
5. Whisk in the yogurt mixture. Simmer for 5-7 minutes
6. If too thick you can add some of the reserved water (slowly)
