Ingredients

  • 1/2 C brown sugar, not packed
  • 2 star fruit, cut into 1/2inch slices
  • 1/2 C blueberries
  • 2 T OJ
  • 1/2 C olive oil
  • 2/3 C sugar
  • 1 ego plus 2 egg whites, beaten
  • 1 1/2 C cake flour
  • 1 1/2 t baking powder
  • pinch of salt
  • 1/2 C milk
  • 1 1/2 t vanilla
  • 1 t almond extract

Preparation

Step 1

Heat oven to 350*. Lightly grease 9in round cake pan; sprinkle brown sugar evenly over bottom. Pack star fruit tightly, pressing into sugar. Fill gaps with blueberries and drizzle w/ OJ.
In large bowl combine oil and sugar. Add eggs and mix. In another bowl, combine flour, bp, and salt. Add flow mixture to oil mixture alternating with milk. Stir in vanilla and almond extracts. Pour batter over star fruit and bake 30 min.
Cool 5 minutes, then invert onto plate. Serves 12
