Ingredients
- 1 pound pork tenderloin
- 3 teaspoons dark sesame oil divided
- 1/4 cup chopped green onions
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon honey
- 1 teaspoon ground ginger
- 1/2 teaspoon freshly ground pepper
- 2 garlic cloves minced
- Cooking spray
- 1 tablespoon rice vinegar or white vinegar
- 1 tablespoon water
- 8 cups torn spinach
- 1 (2-ounce) jar diced pimento
- drained
- 2 tablespoons coarsely grated Gruyère cheese
- OR
- 2 tablespoons coarsely grated aged Swiss cheese
- 2 tablespoons sesame seeds toasted
Preparation
Step 1
Trim fat from pork; slice into thin strips. Combine 1 teaspoon oil, green onions, and next 5 ingredients (green onions through garlic); rub evenly over pork. Place pork on a broiler pan coated with cooking spray; broil 4 minutes on each side or until desired degree of doneness.
Combine 2 teaspoons oil, vinegar, and water in a small bowl; stir with a whisk. Add vinaigrette to spinach; toss to coat. Divide spinach evenly among 4 plates; arrange pork on top of spinach. Top with pimento, cheese, and sesame seeds.
Serving Size: 2 cups spinach, 3 ounces pork, 1 tablespoon pimento, 1 1/2 teaspoons cheese, and 1 1/2 teaspoons sesame seed
