Ingredients

  • 1 (3oz) package cream cheese, softened
  • 5 large eggs, divided
  • 1/4 C. milk
  • 1/2 tsp cracked pepper
  • 1/8 tsp salt
  • 2 TB chopped fresh chives
  • 1 TB butter
  • 1/2 C. (2oz) shredded Monterey Jack Cheese
  • 3 slices of bacon, cooked and coarsely crumbled

Step 1

Beat cream cheese at medium speed of an electric mixer until smooth. Add 2 eggs; beat until smooth. Add remaining 3 eggs, milk, pepper, and salt; beat until blended . Stir in chives.

Melt butter in a large nonstick skillet. Add egg mixture; cook over medium-low heat, without stirring, until egg mixture begins to set on bottom. Draw a rubber spatula across bottom of skillet to form large curds. Add shredded cheese and bacon. Continue cooking until cheese melts and eggs are firm but still moist (do not stir constantly). Serve immediately.
