Parmesan Penne with pancetta

- 8 oz dry penne pasta
- 2 tbs olive oil
- 3 oz pancetta, diced
- 1 tbs minced fresh garlic
- 1/2 cup dry white wine
- 1/4 cup grated Parmesan
- 2 tbs minced fresh parsley
- salt and pepper

Step 1
Cook pasta according to instructions on package. Heat oil in a large skillet over medium. Add pancetta and cook until crisp. Transfer pancetta to a paper-towel-lined plate. Drain off all but 2 tbs drippings. Add garlic to skillet and cook over medium high heat until fragrant, 30 seconds. Deglaze pan with wine and reduce by half, 2 minutes. Stir in pasta, tossing to coat, then stir in Parmesan, parsley and pancetta; season with salt and pepper.
