Ingredients
- 1 egg yolk
- 1 clove garlic
- 2 anchovies
- 1/2 lemon
- 1/2 cup extra virgin olive oil
- 2 T cider vinegar
- 2 T wine vinegar
- 1 large head Romaine lettuce
- 1/2 tsp dry mustard
- 1/8 tsp freshly ground pepper
- 1/3 cup grated parmesan cheese
- 1 cup croutons

Step 1
In a mortar/pestle mash the garlic along with the anchovies. Add the juice of half a lemon. Warm the egg in hot water, separate and add the egg yolk to mixture. Blend well until thick and creamy. Slowly add the olive oil and beat with a spoon until well blended. Add the vinegars, dry mustard, pepper and parmesan cheese. Beat with a whisk until creamy. Rinse the lettuce and make sure that it is crisp and dry, cut into pieces. Toss salad just before serving. Add additional anchovies on top along with shaved pieces of fresh parmesan.
